Tapenade is an olive paste made by crushing olives rather than grinding them. Only the finest ripe olives are used for our tapenade. Crushing the olives gives the tapenade a coarse texture and preserves their full flavour.
While lower-grade olives are often used for tapenade, Serra de Rodes tapenade is made using only the finest ripe olives.
