BBQ MUST-HAVE!
One exceptional ingredient can take a dish to another level. Valderrama Smoked Arbequina olive oil is a perfect example. Made from Arbequina olives and gently smoked over oak wood, it adds a deep, refined smoky flavour without the need for a barbecue or wood chips.
The flavour is intense yet elegant and pairs perfectly with grilled dishes, fish, meat, roasted vegetables and even cheese. In this recipe, we combine the oil with fresh lemon and tender chicken for a summery barbecue dish full of character.
Ingredients (serves 4)
- 500 g boneless chicken thighs (diced)
- 3 tsp Valderrama Smoked Arbequina olive oil
- 2 cloves of garlic (finely chopped)
- Juice and zest of 1 lemon
- 1 tsp smoked paprika
- 1 tsp honey
- Salt & pepper
- Bell pepper and red onion (chopped)
- Optional: fresh parsley
- Skewers
Method
1. Make the marinade
Mix the olive oil, garlic, lemon zest and juice, smoked paprika, honey, salt and pepper into a fragrant marinade.
2. Marinate the chicken
Toss the chicken pieces in the marinade and leave for at least 30 minutes (ideally 2 hours for extra flavour).
3. Assemble the skewers
Thread the marinated chicken onto skewers, alternating with pepper and red onion.
4. Grill on the BBQ
Grill the skewers over medium heat for around 10–12 minutes. Turn regularly so they cook evenly.
5. Finish and serve
Just before serving, drizzle the skewers with a little extra Valderrama Smoked Arbequina olive oil and garnish with fresh parsley.
Tip
The subtly smoky flavour of the olive oil enhances the barbecue effect without any extra smoking wood. Combined with lemon, the dish stays fresh, light and perfectly balanced.
