They are prepared by one of the few producers who still roast peppers according to a traditional recipe, in a large, old wood-fired oven that gives them a smoky flavour and aroma. Unlike most red peppers on the market, these contain very few added ingredients such as oil, spices or vinegar. They taste almost sweet, making them perfect as tapas or in salads, quiches, and alongside meat or fish.
